Soft and delicious, this bread made with freshly milled whole wheat flour is going to be a new favorite in your home! Today I’m going to share with you my favorite recipe for bread, and teach you how to make whole wheat bread from scratch!
For the longest time I used unbleached non-GMO flour, but more recently I found out about the benefits of milling your own flour. After that I just had to get a mill. It was out of my budget at the time, so I improvised and used my cheap blender. It worked but nothing like an actual mill does. It was not fine enough to produce a nice loaf of bread.
I ended up getting a Nutrimill Classic. I really love this mill! It holds a lot of wheat at the top and produces a lot of flour in one batch. If I don’t use up all the flour in one day, I’ll just stick it in a container and put it into the freezer. With freshly milled flour you have to do that or else it will go rancid. It’s interesting how store bought flour doesn’t seem to go bad. 🤔 They must have to change the flour a lot to keep it shelf stable.

Here’s a list of reasons why you should mill your own flour:
- For one the Lord compared Himself to it throughout the Bible so it must be good!
- Freshly milled flour is very high in fiber. Much higher than store bought, because they remove the bran in white flour.
- Store bought flour is stripped of all its nutrients to make it shelf stable. They remove the bran and the germ. When they do that, they remove 75% of the wheat’s nutrition! They also bleach it. Yuck!
- After they remove all the good stuff and bleach it they add synthetic vitamins to it to try to replace what they have removed.
- When you grind wheat yourself it retains all of its original nutrients. The bran, the endosperm, and the germ. No bleach or synthetic ingredients.

Tips for making freshly milled whole wheat bread
- Always add your wet ingredients first in your mixing bowl, then add your dry.
- Always proof regular yeast.
- If you are using rapid rising yeast, I add it after I add my flour to the mixing bowl. Here is the brand I use
- When you mill your flour, mix the flour well before scooping any out. If you don’t the bran and flour will remain separated. I’ve made this mistake before and made hockey puck like rolls because I scooped out more bran than flour because it wasn’t mix well and evenly distributed.
- Check your bread machine while it’s running to make sure your dough is being mixed well. If it’s not, grab a spoon and mix around the paddle being careful not to hit it. It has never damaged my machine, but it startles me every time. Haha!
- Check your dough mid-rise to make sure it is not reaching your lid. If it is quickly punch it down and start shaping your dough. If you let it continue to rise it will overflow into your machine making a big sticky doughy mess!
- Store your freshly milled wheat in the refrigerator or freezer.
Can I use regular store bought flour for this recipe?
Yes you can. I have done it when I’ve ran out of wheat berries and it still turns out wonderful!
Can I use sugar in place of honey?
Yes! You can use the same amount of sugar that you would use of honey. If you would like it with less sugar that’s okay too! It won’t hurt anything.
Today I want to share with you my bread recipe made with freshly milled flour.
For this recipe I will be using my bread machine on the dough setting. If you don’t have a bread machine the traditional way of making bread will work just fine. I like using my bread machine because it saves me a lot of time!
Using freshly milled flour will completely take the nutrition of your whole wheat bread to a whole new level. I hope you enjoy this recipe!
How to make whole wheat bread from scratch
The first thing you need to do is proof your yeast if you are using regular yeast. If you are using a rapid rising yeast, you can skip this step. To proof your yeast, add your 1 2/3 cups of warm water to your liquid measuring cup. Then add your honey and yeast to the warm water in the measuring cup. Mix together well and wait a few minutes for the liquid to turn foamy as shown in the picture below.


Once your yeast liquid is nice and foamy dump it into your bread machine mixing bowl and add your 4 tablespoons of oil.
Add all of the rest of your ingredients starting with your freshly milled flour. Then add your 2 teaspoons of salt.
You’re ready to place your mixing bowl back into your bread machine. Once you do so close the lid and select “dough” setting and press start.

When your dough is done in your bread machine, remove the dough and shape it into a loaf. Place your dough that is well shaped into a greased bread pan. Let rise for about 35 minutes or until doubled in size.
Preheat your oven to 375 degrees and bake for 25 minutes. When it’s done let it cool down until you can handle it with your bare hands, then remove it so the crust that is on the inside of the pan doesn’t stay soft and mushy.

- Remember this is fresh bread so it does go bad quicker because we don't add any preservatives. Make sure you eat it within a few days!

Yes lol it’s no big deal if you don’t have one. It will just mix up like regular bread. Just throw it all together, knead for 5 to 10 minutes and it should be fine!
