Mayonnaise is a delicious dressing that can perfect a sandwich, but all too often the big name companies add in harmful oils and chemicals. It is so important to learn how to make mayonnaise from scratch so you can avoid these harmful additives, and give your family the best!

Almost every mayonnaise I pick up at the store has harmful chemicals in it such as EDTA and inflammatory oils such as soybean oil and canola oil in them. Even the mayonnaise that claims to have olive oil or avocado oil can STILL have canola oil or soybean oil in it. They are very sneaky and you MUST read your labels.
I also dislike the expensive mayonnaise, because in my opinion it is shameful to charge people outrageous prices for something that is so simple to make at home from scratch…but like I said, that’s just my opinion. 🤷

So what actually goes into mayonnaise?
Surprisingly not much! Just a few simple ingredients make enough mayonnaise that could fill up a pint jar. I use light olive oil in my mayonnaise because I enjoy the flavor much more than using a robust olive oil. I also add one egg, vinegar, lemon juice, salt, a little sugar, and paprika, and that’s it! Super easy, no need to spend a fortune on organic mayonnaise at the store.
How do you make mayonnaise at home from scratch?
When I make mayonnaise I add all of my ingredients first except for the olive oil. Then lastly I add my olive oil in slowly, that way it doesn’t mix everything up because before we blend the ingredients together the oil and other ingredients should be separated. Then I place my stick blender on the very bottom of my container that I’m using and blend without moving for about 20 seconds. After the 20 seconds you will start to notice it will begin to emulsify. Once it begins to emulsify you will move the blender up and down slowly until it all has completely emulsified.
Once it is all done you can enjoy it immediately! You can store the mayonnaise in an air tight container or jar for about a week.

Do I have to add sugar in my mayonnaise?
No, you do not have to add sugar to the mayonnaise, but I’ve tried it without that tiny bit of sugar and it just ins’t the same. It takes the bite away from the lemon juice and vinegar and makes it very smooth tasting. It really brings it all together!

Olive Oil Mayonnaise
Equipment
- Stick blender
- Jar
Ingredients
- 1 egg
- 1 tsp lemon juice
- 1 tsp white vinegar
- 1 tsp Dijon mustard
- 1/2 tsp paprika
- 1/4 tsp sugar
- 1/4 tsp salt
- 1 cup light olive oil
Instructions
- Add all of the ingredients to a jar that can fit your stick blender starting with your egg first and ending with the olive oil. Be careful not to just dump in the olive oil and mix all the ingredients together. Pour it slowly down the side of the jar so you don't have to wait as long for the oil to separate from the rest of the ingredients.
- Place your stick blender at the bottom of the jar and hold it in one place blending for about 20 seconds. You will notice it will begin to emulsify.
- Once the 20 seconds are over, start moving the blender up and down until all is completely emulsified.
- When your mayonnaise is done you may enjoy it right away. Store in an air tight container for a week!
