Yes! You can absolutely use freshly milled flour for these sourdough waffles. When I cook with freshly milled flour I always add less flour than the recipe calls for. Start with a cup less. The dough will be stickier than usual, but if it’s too sticky add a tablespoon more flour at a time until the dough is just right! Here is the grain mill and wheat berries I use.

Overnight Fermented Sourdough Waffles
- 1 cup milk
- 1/2 cup sourdough starter
- 2 tbsp honey
- 1 1/4 cup flour
The next morning add
- 1 egg
- 2 tbsp softened butter
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- The day before you want to make these waffles add milk, flour, sourdough starter, and honey to a bowl and mix together.
- Let the mixture sit on the counter covered overnight.
- In the morning when you are ready to make your waffles add in the egg, softened butter, baking powder, baking soda, and salt. Mix until all is incorperated.
- Plug in your waffle maker, once hot start ladling in your batter.
- Cook for about 4 minutes and check if the waffle is golden brown. If it is still pale close the maker and cook for a couple more minutes. Repeat this step until the golden brown color is achieved.
- Serve the waffles hot with whatever topping you'd like! Enjoy!
